Vegan Smoky Black Bean Soup Crock Pot Recipe
Healthy meals are a staple that I strive to keep in this house. When the schedule for the day gets full, it can sometimes be a struggle to ensure that dinner is together and ready in time to eat. Not having a plan for dinner, or running out of time to make it before the hunger sets in, is what usually leads to our eating out, or eating unhealthy meals. That’s why I just adore crock pot meals. A few minutes in the morning, getting things ready and into the pot, and then you’re good to go about your day and still have a delicious dinner ready and waiting for you when you get home. This is our Smoky Black Bean Soup – which is a vegan dish!
2 medium carrots, chopped
2 celery stalks, sliced
2 scallions, chopped
3 cloves garlic
1 small can tomato paste
1 1/2 tsp. ground cumin
3 cups vegetable broth
3 cans black beans
The amazing simplicity of creating dinner
Creating this dish could not possibly be any easier. Gather your ingredients together. Got them all? Awesome! Now put them in your crock pot. You can cook it on high for 4 hours, or low for 6 hours. Stir, serve and enjoy. You simply cannot get any easier than that! And the best part – it’s amazingly delicious and healthy! Think the flavors (and scents!) of chili mixed with vegetable soup.
** Bonus Note – this would also make a wonderful freezer meal!
When you gather your ingredients, instead of cooking that day, you can place them inside a ziplock bag that you freeze. Move from the freezer to the fridge the day before serving. Morning of meal day, you’d just dump the contents into the crock pot and enjoy that evening.
For a serving twist, you can add some cilantro and / or avocado. We usually serve alongside some homemade bread.
